Brinjal Curry (ಬದನೇಕಾಯಿ ಬಜ್ಜಿ)

Brinjal Curry is also called Badane kayi Bajji or Hindhi in Kannada. This curry is famous in Uttara Kannada district of Karnataka. Brinjal Curry is specifically serve with rice.

Ingredients
  • Brinjal 1 medium size
  • Onion 1 medium size
  • Fresh grated coconut 4 tbs
  • Oil 3 tbs
  • Green chillies 3-4
  • Curry leaves 3-4
  • Mustard half tbs
  • Urad Dal 1 tbs
  • Turmeric powder ¼ tbs
  • Hing ¼ tbs
  • Lemon juice 1 tbs
  • Salt as per taste

Procedure
  • Take a brinjal and burn it on stove finely and later peel off the skin neatly [as shown in below pictures]
  • Now, Burnt brinjal has to be chopped with a spoon
  • Heat the pan and add oil, urad dal, mustard and hing
  • When above ingredients start to splutter, add green chillies, curry leaves, turmeric powder and fry gently
  • Now add the burnt brinjal, salt, lemon juice, grated coconut and fry for 2 minutes.
  • After switch off the stove and finally add onion and mix well
Now your Brinjal Bajji is ready to serve.

Note: If you have coal stove, you can use it for brinjal burning. It will give more taste :)
