Brinjal Curry / Badanekayi enne palya /ಬದನೆಕಾಯಿ ಎಣ್ಣೆ ಪಲ್ಯ


Happy Mother’s Day to all the Mothers and soon to be Mothers :)

This is one of my favourite recipe taught by my mother.  This curry can serve with roti, chapati & rice.

Ingredients
  • 4 Small brinjals
  • 1 Tomato ( finely chopped)
  • 1 medium-size onion ( finely chopped)
  • Fresh grated coconut 4 tbsp
  • Chili powder 1 tbsp
  • Turmeric powder ¼ tbsp
  • Cumin powder 1 tbsp
  • Coriander powder 1 tbsp
  • Sugar 1 tbsp
  • Salt to taste
  • Oil 6-8 tbsp
Procedures
  • For making masala, take a plate or bowl, add chopped onion, chopped tomatoes, grated coconut, chili powder, turmeric powder, cumin & coriander powder, sugar, salt, and mix well. Keep it aside for 5 minutes
  • Cut the brinjals as shown in below picture
  • Stuff the above masala into the brinjals 
  • Take a pan and heat the oil in medium flame
  • Now add the stuffed brinjals & leftover masala to the pan and fry it in low flame till its colour changes. (do not add water, it should be fry in oil only)
