Happy Mother’s Day to all the Mothers and soon to be Mothers :)
This is one of my favourite recipe taught by my mother. This curry can serve with roti, chapati & rice.
Ingredients
- 4 Small brinjals
- 1 Tomato ( finely chopped)
- 1 medium-size onion ( finely chopped)
- Fresh grated coconut 4 tbsp
- Chili powder 1 tbsp
- Turmeric powder ¼ tbsp
- Cumin powder 1 tbsp
- Coriander powder 1 tbsp
- Sugar 1 tbsp
- Salt to taste
- Oil 6-8 tbsp
Procedures
- For making masala, take a plate or bowl, add chopped onion, chopped tomatoes, grated coconut, chili powder, turmeric powder, cumin & coriander powder, sugar, salt, and mix well. Keep it aside for 5 minutes
- Cut the brinjals as shown in below picture
- Stuff the above masala into the brinjals
- Take a pan and heat the oil in medium flame
- Now add the stuffed brinjals & leftover masala to the pan and fry it in low flame till its colour changes. (do not add water, it should be fry in oil only)
