Sweet Corn Rice



Sweet corn rice is healthy, tasty, and easy to make. Children’s may like this sweet corn rice.

Sweet corn is an energy enhancer, helpful during pregnancy and preserve healthy skin

Mint/Pudina may help relieve Indigestion and could improve brain function. 

You can prepare it in 30 to 40 minutes

Ingredients
  • Sweet Corn 1 cup/200g / 1 Corncob
  • Rice 1 cup / 250g
  • Water 2 cups
  • Garlic 4-5 cloves
  • Ginger ¼ Inch
  • Fresh grated coconut 3 tbsp
  • Mint / pudina 2 tbsp ( chopped)
  • Green chili 3-4 
  • Urad dal 1 tbsp
  • Mustard 1 tbsp
  • Oil 2 tbsp
  • Salt 1 tbsp (as per your taste)
Procedure
  • For making masala, add grated coconut, ginger, garlic, green chilies, mint/pudina, 4 tbsp of water into a mixer Jar and blend and keep it aside
  • Now heat the oil in a rice cooker, add urad dal, mustard and let it splutter
  • When mustard starts spluttering, add sweet corn and fry for 2 minutes
  • Then add above blended smooth masala paste, stir well and saute for a couple of seconds
  • Add rice and stir well till rice mix with the ingredients
  • Add water, salt and stir well and close the lid 
  • Wait for 2 whistles and off the gas stove
  • When the pressure settles down on its own, open the lid and stir slightly.
  • Serve hot corn rice with curd or salad
